Bon appétit! The process of making these two pots of menudo has taken more than +10 hours, and I think it turned out quite wonderfully yummy! Happy Twenty Ten everyone!

Last(ly), we add the enchilada sauce to the stock. Now we have to wait, yet again, another 4 more hours.
